Meagre has firm, lean white flesh that holds together in almost any dish. The bigger fish are best as fillets or steaks, in an oven tray with tomato and pepper or on the grill, and the smaller ones whole or butterflied over charcoal with lemon and garlic. It also makes a good sayadeya, and the head makes a rich fish soup. Do not leave it long on the heat; lean flesh dries out.
