Baked fish tray with vegetables
A baked tray is the easiest way to cook fish for a table: everything in one dish and the oven does the work. The trick is that the vegetables need longer than the fish, so they go in first on their own and the fish joins for the last 20 minutes.


Ingredients
- 1 kg grouper or sea bass, as steaks or fillets
- 4 potatoes, sliced
- 3 tomatoes, sliced
- 2 peppers, sliced
- 1 onion, sliced
- 5 cloves garlic, crushed
- Half a cup of olive oil and the juice of 2 lemons
- Cumin, paprika, thyme, salt, pepper
Method
1.Season
Season the fish with garlic, lemon, oil and spices, and leave it in the fridge for half an hour.
2.Vegetables first
Lay the potato, onion and pepper in the tray, dress them with oil, salt and spices, and give them 30 minutes in a 200C oven.
3.Add the fish
Take the tray out, lay the fish over the vegetables, put the tomato slices on top and pour over the rest of the marinade.
4.Bake
Return it to the oven for another 20 minutes, and turn the grill on for the last 5 so the top colours.
Tips
- Grouper and Nile perch are the best choices for a tray because their flesh is thick and holds together. Fillet cooks about 5 minutes faster than steaks.
- Slice the potato thin so it finishes in the same time as the fish rather than staying raw.

How do I know the fish is cooked?
Part the flesh with a fork at the thickest point. If it flakes and looks opaque white with no translucency, it is cooked.
Can I use frozen fish?
You can, but thaw it in the fridge first and dry it well, because the water coming out of it steams the vegetables instead of roasting them.
